I really love chutneys.  When mid summer comes, I get so excited.  All the berries and fruit are ripening just bursting with juice waiting to be picked.  It has to be one of my favorite times of the year.  Although it is a lot of hard work gathering, washing, cutting, fermenting, harvesting, etc., come winter time, it makes it all worth the effort we put forth.  I have a great team with me that is more than happy to jump right in.  They know the drill and work very hard.  With every season comes a new flavor, a new recipe, and typically someone will have a new taste for what they may have thought was yucky from previous years.  Some of our favorite fermented chutney’s are peach, mixed berry, and cinnamon-apple.  The past few years we have enjoyed blackberry chutney and we decided to change it up a bit.  Because we have had a great year for peaches and blackberries, we are going to combine the two for a yummy chutney.  I can not wait!  Before the entire recipe took to fermentation, I had to set out some jars for supper tonight just to let everyone taste test.  You know, I had to make sure it was up to the standard of a toddler.  🙂  Well, I do believe this one is for the books.  I am happy to share this with everyone as it now has become a family favorite overnight.

Ingredients:

  • 4 c. blackberries, raspberries, peaches
  • 4 T. honey (or you can use sugar)
  • 4 T. fresh whey (I make this from my raw milk)
  • dash of cinnamon
  • 1/4 t. sea salt

Instructions:

  • Put the berries in a quart-size jar.  Pack them tightly with your hand.  In a bowl, mix whey, a few tablespoons of water, sugar, and salt until it has dissolved.  Pour the liquid ingredients over the berries, and then fill jar with filtered water, leaving 1 inch of head-space.  Press down with a wooden spoon to be sure the water has filled all the air pockets.  Add more water if necessary.
  • Be sure the berries are below the waterline, using a weight.  Put a lid on and leave at room temperature for up to 2 days.  Store in refrigerator and use within 2 months.
  • This is heavenly.  It has a little pop or fizzyness in your mouth.  If you love any chutneys at all, you are surely to like this one too.  I hope you enjoy making this with your family.  Blessings!
