Apple-Cinnamon Steel Cut Oats

 

When summer is just about to wrap up the last days of its heat, the apples are just calling out to me ready for picking.  We love this time of year because it brings in so many wonderful opportunities to make memories canning applesauce, making apple crisp for the neighbors, or picking and eating as we go.

 

 

Ingredients:

  • 2 apples, cored and diced 
  • 2 c. milk
  • 4 c. water
  • 1 1/2 c. uncooked steel cut oats
  • 3 tsp. vanilla extract
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice

 

Instructions:

  1. Grease inside of 3-1/2 quart slow cooker.
  2. Peel and core the apples. Put into the slow cooker. Add remaining ingredients over apples. Stir, cover, and cook on low for approx. 5-7 hours or high for 4 hours. (or soak all ingredients during the day and turn on at night to be ready for the morning’s breakfast.)
  3. Spoon oatmeal into bowls; add optional toppings such as almonds, nut butter, seeds, or fresh fruit.  We also like adding a little honey or maple syrup.
