Ingredients:

8 oz. cream cheese

2 c. cooked chicken, shredded

1 1/2 c. homemade cream of chicken soup

8 oz. sour cream

8 oz. sharp cheddar cheese, cubed

4 oz. jalapeno jack cheese, cubed

1 jalapeno, diced

1 small onion, chopped

1 small green pepper, chopped

1 small can Rotelle

salt to taste

 

Directions:

Saute the jalapeno, onion, and green pepper until onions are are browned and at its sweetest point.  Mix all other ingredients in a medium pot over low heat until completely melted, stirring constantly.  This makes about 6 cups worth. 

This recipe is one of our family’s favorite Sunday evening snack.  Pair it with some tortilla chips and salsa and you have an ideal comfort food for a crowd!  We also serve this dish in a crockpot when we have guest over.
