Authentic Tzatziki Sauce

Jason and I have two favorite meals we enjoy eating when we go out on a date.  One of our absolute favorite food is an authentic Greek gyro smothered in tzatziki sauce with a side of baba ghanouj!  The very first time I ever experienced authentic Greek food was on our honeymoon.  I love the fresh tastes of all the herbs mixed with the yogurt on top of the warm lamb.  The olive oil that rests on top of the baba ghanouj is so savory.  It makes me want to travel and experience all the lovely foods from that region!  

 

Ingredients:

1 cucumber, partially peeled (striped) and sliced

1 tsp. salt, divided

4 to 5 garlic cloves, peeled, minced

1 tsp. white vinegar

1 Tbsp. Olive Oil

2 c. yogurt

1/4 tsp. ground pepper

Warm pita bread for serving

Sliced vegetables for serving

Directions:

  1. Cut the cucumber into small, bite-size pieces. Toss with 1/2 tsp. salt. In a large mixing bowl, place the garlic with remaining 1/2 tsp. salt, vinegar, and olive oil. Mix to combine.
  2. Add the cucumber with the garlic mixture. Stir in the yogurt and pepper. Combine thoroughly. Cover tightly and refrigerate for a couple of hours.
  3. When ready to serve, stir the tzatziki sauce to refresh. Add a side of warm pita bread and your favorite vegetables. We hope your family enjoys this as much as we do!
